Chocolate Covered Honeycomb is the easiest three ingredient recipe you can imagine. I made this solely because i wanted to see how baking soda when its mixed into melted sugar turns into this honeycomb toffee texture. The process is simple.You only need 1/2 cup sugar, 2 tbsp honey and 1/2 tbsp baking soda.
Mix the sugar and honey in a saucepan and put it on a medium flame let it just simmer and melt . Dont mix with the spoon as soon as the sugar and honey mixture starts to melt just stir the saucepan afterwards.
When you think the sugar has fully melted and caramelized add in the secret ingredient Baking Soda. This is the fun part as soon as you add it in switch off the heat and vigorously mix in the baking soda so its fully incorporated. It will start to foam up and double in size .
Then from there quickly on a tray covered with foil spread the mixture because it starts to harden in minutes so you have to be quick.
After that leave it for like half an hour and it will become solid and then you can break it up into pieces and enjoy the sugary treat.
Or like me you can cover it with chocolate and then enjoy it :). You can use it as toppings for cupcakes, cakes or add in ice creams which i will show you in my next post .
